So why does a good BBQ cook out cause meats to stall in a temperature rise? I’ve often wondered this and had a small fire running in my offset firebox which I then had to remove wood from to keep the temperature for rising to high. So I came across this article and now know that it is not me doing something wrong but it is merely the meat sweating.
